English Muffin Pizza and Almond Butter Parsnip Fries

Feeling: Not too bad, but I briefly considered wearing shorts, changed my mind last minute, and then wished once I met my friends that I had worn shorts afterall. No matter, as my friend Lisa says often, I can think about it as training to run in really hot weather.

It’s official – breakfast is my favourite meal of the day! I fueled up for my LSD run this morning with last night’s prepared bowl of Overnight Oats. I topped my oats with:
- 1/4 c frozen strawberries
- 1 tbsp flaxseed meal
- 1 tsp cinnamon
- dash nutmeg
- dash cloves
- 1.5 tsp dark chocolate dreams peanut butter
Believe me when I say that it was delicious all swirled together!
I ran this morning in my new shiny white shoes. I tried to take a picture to remember them because as we all know, they won’t stay white for long. All it takes is a trail run, or a rainfall and they’ll be white no longer. The good thing is that I didn’t feel that there was any adjustment necessary to run in them – I felt like I had already broken them in, so no complaints there. My left shin started hurting a bit near the end of the run, but I think I’ll be okay, as long as I stay off that foot until Tuesday’s group run.
We were lucky and missed the rainfall by about 2 minutes. Sometimes things work in your favour.
As soon our run was over, I dashed home because I had booked a much needed hair appointment that I had been looking forward to all week. We finished our run at 11:45 and my appointment was booked for 12:15…. so I called them and after some pleading, they agreed to push my appointment back to 1pm.
When I got back to my apartment, I made a Green Monster with:
- 1/2 c organic soy milk
- 1/4 c strawberies
- 1 banana
- 3-4 handfuls of raw baby spinach
It was simple but satisfying.
I rushed out the door with half an hour to get to my appointment. But with the rain, and having to make a quick stop at the bank to get money out, and the TTC being _INCREDIBLY_ slow (seriously, does it really need to stop and wait 3 minutes at each stop!?), I ended up missing my appointment completely. Normally I’d be able to take disappointment like that, but I had been looking forward to getting my hair cut all week (after complaining that I’ve been needing a hair cut since last December), so I was pretty upset. Blah.
I ended up wandering around Yorkville and stumbled upon Whole Foods. Erm, I’ve been avoiding going to this grocery store because everyone always warns me about how it’s really Whole Pay-Cheque. I totally get it, and when it comes to good food, I don’t normally have much restraint. Today, I lost my willpower to stay out and decided that innocently wandering through the store would probably make me feel slightly better. A decrease in my bank account, and a grocery bag full of goodies later, I finally made my way back to my apartment to eat a proper meal.
Lunch/mid-afternoon snack was half an Ezekiel 4:9 English Muffin Pizza with:
- Spinach and Basil Pecan Walnut Pesto
- One tomato slice
- Grilled Portobello mushroom
- 1 Basil leaf
- Shredded Part-Skim Mozzarella cheese
I also attempted to make some Almond Butter Parsnip Fries, as inspired by Angela’s glowing review of them. I don’t have chunky peanut butter at the moment, so for my coating I used:
- 1 tbsp Almond Butter
- 1 tsp olive oil
- dash of salt
I peeled one small organic parsnip, cut it into strips, coated each piece, and baked them in the oven at 400°C for 35 minutes. I probably could have kept them in for longer but I got impatient and hungry.
Finally, it was time to eat.
I started with a baby spinach salad with tomato, grilled portobello mushrooms, baby cucumbers, dill, onion powder, and sundried tomato and organo salad dressing.
Then I dug into my pizza and parsnip fries.
YUM!
I also snacked on the following throughout the day:
- a handful of Sweet Chili Crispy Minis
- 6 Robin Eggs
- 6 Popping Mini Eggs
- 10 brown rice crackers (I know, I know…)
Since I’ve got evening plans, I decided to prepare my breakfast a few hours early. Tomorrow’s breakfast will be a Chocolate Multi-grain Breakfast Cookie, which was heavily inspired by this recipe. I’m definitely going to be topping it with some yogurt tomorrow. Oreo-inspired breakfast cookie, here I come!
- 1/3 c multi-grain oats
- 1 tbsp almond butter
- 2 tbsp toasted carob powder
- 2 tbsp organic soy milk
- 1/2 mashed banana
Well, that’s all for now. I’m out celebrating a friend’s birthday tonight so I probably won’t update again until tomorrow. Have a happy Saturday!
