Smoked Oyster Pasta Salad

Have you ever had one of those days where you’re too lazy to cook, but you’re too impatient to wait for food to be delivered to you? Yeah, that’s the true definition of laziness, right there. And I’m guilty as charged.

Luckily, I was able to throw this surprisingly delicious salad together in less than 20 minutes. In fact, cooking the pasta is what took the longest. The results were impressive enough to be photographed and documented, so I suggest you give this a try the next time you’re feeling as lazy as I was.

Smoked Oyster Pasta Salad

1/2 cup dried whole-wheat pasta (or about 1 cup cooked pasta)

1 can of smoked oysters in oil

1/2 fresh tomato, chopped

Fresh spinach or baby spinach (as much as you want)

1/4 fresh mushrooms, sliced



Cook pasta according to the package directions.

As soon as the pasta is ready, drain let it cool slightly. Toss cooled off pasta with the entire contents of smoked oysters (including the oil), tomatoes, spinach, and fresh mushrooms. Season with salt and pepper to taste. Enjoy!
