Before I switched jobs, I used to look forward to this delicious sweet and sour fish Friday special at the Fit for Life next door. Now that I no longer work in the same area, I decided to fix my Friday craving by attempting to make this fish at home.
Sweet and Sour Fish
2 haddock fillets, sliced
1 Red Pepper, chopped
1 garlic clove, minced
Mix corn starch, salt and pepper in one bowl or shallow baking dish. Beat two eggs together, and season egg mixture with salt and pepper.
Dredge each piece of fish into the egg wash, followed immediately with the corn starch. Fry each piece until a crush appears in a pan.
In another frying pan, heat up the red peppers with minced garlic. As soon as the red peppers are softened, throw the fish back in and pour over sweet and sour sauce.
